I have my guest contributor Jennifer of Sugar, Spice & Glitter back here again with another AMAZING COCKTAIL, perfect to channel my fave Girl Scout Cookies, Thin Mints (frozen are best) and just in time for St. Patrick’s Day!! 
 
A grown-up take on Thin Mint cookies, this Thin Mint Cocktail is the perfect way to curb those mint cookie cravings until the Girl Scout cookies are available again in the fall.
 
Part of the obsession with girl scouts cookies is that they are not always available – and no imitation version at the grocery store really tastes the same. I know I’m not the only one that buys multiple boxes hoping that they will last me awhile… and they always disappear faster than I expect! (The kids finding my Girl Scout Cookies stash doesn’t help.)
 
I’ve been having fun coming up with some Thin Mint-inspired recipes to hit the spot until fall when the Thin Mint cookies are available again, first with our Thin Mint Cupcakes and now with this delicious layered Thin Mint Cocktail.
 
This cocktail can be made a couple of different ways – using Creme de Menthe liquor or mint simple syrup, cream and vodka. I always have cream and vodka on hand – and the mint syrup can be used to make mojitos or mint juleps so for me, buying the mint syrup is a better option than buying the Creme de Menthe.
 
Be light with the mint simple syrup to prevent your cocktail from tasting like a big glass of toothpaste! You want the chocolate flavor to be more dominant with the mint as a compliment, just like biting into a delicious mint chocolate cookie. If you’re serving these at a party, prepare one or two ahead of time to taste and adjust to your personal preferences.

Girl Scout Cookies Cravings : Delicious Thin Mint Cocktail recipe by Sandy A La Mode

Ingredients:

1 oz chocolate liquor
3 oz coffee cream
3 oz vodka
1/2 Tablespoon mint simple syrup
Green food dye, optional
2 Tablespoons chocolate syrup
2 Tablespoons chocolate cookie crumbs (I used chocolate graham crumbs)
 
*Note: You can use creme de mint for the mint layer, if you already have it on hand.
 
Kitchen Tools You May Find Helpful:
Cocktail shaker
Measuring cup or jigger
Spoon
Champagne/cocktail glasses
Ice maker
 
Directions:
Place the chocolate cookie crumbs in a shallow dish wide enough to insert your cocktail glass.
Wet the rims of your cocktail glasses and dip into the chocolate graham crackers to make a 1/4 to 1/2″ chocolate rim.
Add 1 Tablespoon of chocolate syrup to the bottom of each cocktail glass and set aside.
Fill a cocktail shaker with ice and add the cream, vodka, mint simple syrup and food dye.
Shake well for 1-2 minutes until well blended and chilled.
Carefully pour half of the cream mixture over the chocolate syrup layer (use the back of a spoon if it’s blending too much).
Finally, place a spoon gently ontop of the green cream layer and pour the chocolate liquor onto the spoon to make a clear chocolate liquor layer.
Serve immediately for best taste – the layers will stay separate for an hour if you need to make these ahead of time.
